The Cook

I love to cook. I particularly enjoy cooking for family and friends.

I started cooking when I was 6 or 7. The story began when my mother gave me a box of Duncan Hines blueberry muffins. From there to homemade baking recipes. It wasn't long before I learned béchamel, and other recipes. I cooked a lot as a child and as a teenager. Obviously home cooking doesn't really translate in a professional kitchen, but I learned to be inquisitive and curious and creative. It was not unusual to open the refrigerator or cupboard with my mother and decide what to cook based on what was on hand.

I trained as a professional cook at L'Institut de Tourisme et d'Hôtellerie du Québec, in Montréal. I worked in private clubs, 5 star hotels, bistros, restaurants, holiday camp for kids and resorts. As many other people in the trade, I worked "the seasons", going from one establishment to another following tourists - Summer in one resort area, Winter in another area. My goal was to learn different styles of cooking and get a broad understanding of all aspects of the trade.

I stopped working in professional kitchens in the mid 1990's because not many professional kitchens are wheelchair accessible. My passion for food and cooking has not left me and I am now hoping to share my knowledge and passion with you through this site.

We are living in a world today where lemonade is made from artificial flavors and furniture polish is made from real lemons. Alfred E. Newman
